Nectarine and Onion Jam

This jam is very easy to make and makes a perfect summer appetizer with toasted bread and goat cheese. I imagine it would also serve well atop fish or chicken and would be delicious on a summer burger.


Makes 2 cups

Ingredients

2 white onions
2-3 tablespoons olive oil
4 ripe nectarines
salt
fresh ground pepper
toasted bread
goat cheese


Peel the onion, cut into quarters and slice into ¼ inch slices. Heat the olive oil over medium heat and add the onion slices. Season with salt and cook over medium/low heat, stirring occasionally until the onions are caramelized, about 20-30 minutes.

Meanwhile, cut the nectarines in half, remove the pits and cut into slices. Add to the caramelized onion and cook 15 minutes more, stirring occasionally. Season to taste with salt and pepper. Turn off the burner and let sit 5 minutes. Serve warm, room temperature or cold with toasted bread and room temperature goat cheese.
